CHICKEN TIKKA BIRYANI

This Biryani is super easy to prepare & is an ideal Weekend Lunch/Dinner Recipe idea.
You don't require a whole lot of Ingredients.Infact that is my cooking motto ,"Keep it as simple as possible without compensating on the taste or quality of the dish"

Chicken Tikka Biryani.

Preparing the rice
Wash & Soak for 15 mins 1 & 1/2 cup of basmati rice
Bring to a boil 1 litre of water ,add 6 cloves,4 elaichis,1/2 inch of cinnamon,6 pepper corns and 1 bay leaf ,,par boil the rice or cook till a little under done.Drain out the water and keep rice aside
Marinating the chicken

Take 3 cups of thick dahi/curd
add 1 packet of either chicken tikka masala pwdr,/tandoori pwdr or chicken lollipop pwdr,ginger garlic paste
add 1 & 1/2 tsp of coriander pwdr.1 tsp of Kashmiri red chilli pwdr,salt .
Also fry 4 large onions sliced thinly and a handful of cashew nuts
Preparation----
In a heavy bottomed pan add 1 tbsp. of ghee
add half of the fried onions,1/2 tsp of haldi pwdr and 1/2 tsp of red chilli powder.mix well
add the marinated chicken add a lil of the fried cashew nuts,
add 1/2 tsp of cumin pwdr ,salt and a pinch of garam masala.cook for 5 mins and keep aside .
Assembling the Biryani.

In a heavy bottomed vessel,add 1/2 tbsp. of ghee
add all of the prepared chicken,flatten add all of the rice
flatten ,pour some kesar/saffron strands soaked in warm milk on top
put the fried onions,cashewnuts and lots of fresh coriander and pudina
cover tightly and cook on a low flame for 15 -20 mins
