GOAN MARZIPAN RECIPE

This is a staple Christmas sweet or Kuswar made in almost every Goan Home.The main ingredient being cashewnuts.You cannot just stop at one..they are little drops of deliciousness







GOAN MARZIPAN RECIPE.

This recipe is the easiest and most delicious marzipan recipe I've come across ,shared graciously by my aunt Philoo or Philomena...

200 GMS /2 cups of cashewnuts soaked in water for an hour and ground to a thick paste
add the white of 1 egg,1tsp of vanilla or almond essence

In a heavy bottomed pan add this mixture ,add 200 gms or 2 cups of icing sugar..stir on a low to medium heat.
it will first turn into a liquid and slowly start thickening
keep stirring for 10 to 15 mins
do a water test..take 1/2 tsp of the mixture and put it in 1/4 th cup of room temp water ..it should form a firm and smooth ball
that shows that your mixture is ready .
Take it down from the heat and let to come to a warm temperature..knead it well to form a firm yet smooth dough
divide into parts ..add food colour ,make small balls and put in a mould.

Marzipans are ready.
