A VERY HEALTHY DAL SOUP RECIPE
Healthy Dal Soup Recipe

wash and soak 1/2 cup of toor dal
in a pan heat 1 tbsp of oil ,add 1 tbsp of ginger garlic paste(1/2 inch of ginger and 4 cloves of garlic)
add 1/2 a medium onion chopped,add 5-6 curry leaves
add a cup of cubed bottle gourd/dudhi,1 cup of cauliflower florets,1 carrot diced,you can add any vegetable of your choice,add 1/4 tsp of haldi/turmeric powder,red chilli powder,cumin/jeera powder/corriander/dhania powder
add the soaked toor dal,add 1 cup of water,add salt to taste
pressure cook for 1 whistle on high and simmer for 10 mins
once the cooker has cooled down take out the mixture let it cool ...blend it to a smooth puree..again put it in a pot or the cooker itself ..add a little water ,salt if required ,1/2 tsp of pepper powder...simmer for 2 mins
serve hot ...garnish with a sprig of corriander and some croutons.
to make croutons ,take 4 brown bread slices ..cut into small cubes .pour 1 tbsp of olive oil in a pan ..toss the bread cubes in the oil till golden brown...
