Today's special recipe of Ukdiche Modak is being prepared by my mother in law..and she is an expert at it..here are the ingredients & method Ingredients for 15-20 modaks medium sized 1 large coconut grated-fresh is the key word here measure the grated coconut and add exactly half the quantity of jaggery/gul.. 1 tsp of elaichi powder 250 gms/1/4 kg of modak flour(rice flour if you cannot get special modak flour) 1 litre of water Method Filling Add both the coconut & jaggery in a heavy bottomed pan and mix well ..let the gul melt well with the jaggery.this takes about 10-12 mins on a low to medium flame,stirring continuously..once they mix well together turn off the heat & add the elaichi or cardamom powder and keep aside. Dough In a large vessel add the water &let it heat up,add salt to taste.(1 tsp) & 1 tbsp of oil...once the water starts to boil a bit ,add the flour and mix well by stirring till it all comes together..till all the water is absorbed.now turn off the heat cover and keep for 5 mins.after 5 mins transfer this mixture onto a large plate...sprinkle a little room temperature water and knead this mixture till very very smooth ..once smooth knead with some oil and water ( a sprinkle) cover this dough with a damp cloth..then proceed making the modaks as shown in the video...then prepare th steamer ,once ready..place a damp cloth on the perforated plate in the steamer .place the modaks(after dipping the base of each modak in some water) on the damp cloth,close the steamer and steam for 15-20 mins on a medium to high flame..also make one karanji with all the modaks...
