Ingredients:
Potato small 20
Onion large -1
Tomatoes -2
Ginger - 1 inch
Garlic cloves - 6
Dry red chillies -4
Cashews - 10
Cumin seeds -1 tsp
Green Cardamom-2
Black pepper - 10
Bay leaves - 2
Black cardamom -1
Cinnamon stick - 1 inch
Turmeric powder -1/2 tsp
Red chilli powder (kashmiri )- 1 tsp
Cumin powder -1/2 tsp
Coriander powder -1tsp
Garam masala powder - 1 tsp
Coriander leaves - 1/4 cup
Ghee - 2 tsp (optional)
Cooking oil -1/4 cup
Method
Wash & peel the potatoes,prick them with a sharp knife/fork.Heat oil in a pan & fry potatoes till dark golden brown,once done set aside,now take out the oil from the pan & retain about 1 tbsp only,add the onions,ginger,garlic, cashewnuts & red chillies fry well,add the tomatoes & fry till soft.let this mixture cool ,grind to a very fine paste without adding any water.Add 1 tbsp oil to the pan and add the bay leaves,cinnamon,cumin,cardammons & peppercorns fry well ,add the ground paste,fry for a minute,add turmeric,red chilli powder,mix well,add coriander powder,cumin powder & kashmiri red chilli powder,mix well,add water 1 & 1/2 cup mix well add the potatoes,salt to taste,cover & simmer for 10 mins,add the garam masala,turn off the heat add the coriander leaves & clarified butter,Dum aloo is all ready.
