Today's recipe is these delicious Meethi leaves/Fenugreek leaves puffed/crispy puris .They can be stored for about 2-3 weeks in an airtight container/refrigerated.A great tea time snack or a snack when hunger strikes,a great travel meal as well.Do give these puris a try.
Ingredients
1 Cup Fenugreek/Meethi leaves chopped fine
1 Cup Wholewheat Flour
1/4 Cup Chickpea Flour/besan
1/4 Cup Rice Flour
a paste from 2 green chiilies & 1/2 inch ginger
1/2 tsp powdered sugar
1/4 tsp asafoetida/hing powder
1/4 tsp turmeric powder/haldi
salt to taste
1/2 tsp cumin powder
oil( a few drops)
water
Method
Mix all the dry ingredients well,add the meethi leaves,ginger green chiili paste,salt and powdered sugar,mix well,add a few drops of oil ,add a little water at a time to form a stiff dough.apply a few drops of oil and set aside for 30 mins.grease the rolling surface with some oil,make small balls and roll out as puris ,deep fry till puffed up and golden brown in colour.Fry all and once at room temp ,store in a steel container.It lasts for 2-3 weeks.
