Today's recipe is ‘Bolo Sans Rival’, means a cake without a rival..it’s so good..here are the ingredients  & Method,

Ingredients

For the frosting

1 cup of sugar

1/4 cup of water

6 egg yolks

1 & 1/2 cup of butter (at room temp)

1 tsp of vanilla essence

For the Meringue

6 egg whites

2 cups of powdered sugar

1 & 1/2 cup of powdered cashew nuts(or  almonds)

Method

Frosting:Add the sugar and water to a sauce pan..heat without stirring till it comes to a gentle boil,swirl the pan ,stir the mixture ,cook on a very low heat for 1 min.do the soft ball test as shown in the video.Beat the yolks till light yellow add this sugar syrup & mix well,add the butter a little at a time & mix well,add the vanilla essence& mix till nice & firm.Our frosting is ready.

Meringue:Beat the egg whites till foamy(1 min)add the powdered sugar a little at a time & whisk well,add the cashewnut powder & continue mixing till the mixture is nice & firm.Preheat your oven to 160 degrees for 10 mins,shape the meringues as shown in the video bake @ 160 deg c for 30 mins.Assemble the layers as shown in the video..refrigerate till ready to serve.decorate with cherries /cashewnuts etc.
