 Goan Brinjal Pickle Recipe

Today's recipe is my Nana's recipe of Brinjal Pickle,made the goan way. Its so delicious .The best part is you can have this the same day ,although it does taste better with time.


Ingredients

1 medium sized Brinjal(250 gms) cut into medium sized cubes

2 tbsp of salt

for the masala paste

1 inch of ginger

8 cloves of garlic

1 tbsp of cumin seeds

1/2 tsp of turmeric powder

7-8 red chillies

1/2 cup of vinegar


Other important ingredients

5 cloves of garlic chopped fine

7-8 Fresh Curry Leaves

1/2 Cup of grated jaggery

(If you do not use jaggery you can add sugar as per your taste)

1/2 tbsp of Kashmiri red chilly powder(for the rich colour)

Salt to taste

1& 1/2 Cup of oil(which acts as a preservative too)


Method

Add the cubed Brinjal to a colander/sieve,add the salt & mix well.

Set this aside for 8-10 hours..put a plate beneath the colander to collect the water that comes from the salted brinjal cubes.(discard this water)

After 8-10 hours squeeze out all the water from the brinjal cubes,by pressing them between the palms of your hands(Tip:Add a little oil to your palms as some of us are allergic and there might be a little bit of itchiness from this process)

Set these pieces of Brinjal aside.Now for the masala paste .

Grind all the ingredients to a paste using only the vinegar ,adding a little vinegar at a time.As you see in the video below,I love grinding my masalas for pickles on my grinding stone,but Ofcourse you can use a mixer grinder as well.

Heat the oil in a pan,Once the oil is hot ,add the brinjal cubes and fry till crispy(2-3 mins)

drain the excess oil as set the pieces aside.

To the same oil ,add the garlic,fry for 1 min,add the curry leaves,fry for 1/2 a min.

Add the ground paste,and fry for 2 mins,At this point you will get the aroma of all the ground spices as well as the vinegar..add the Kashmiri red chilli powder.mix well.

Add the fried Brinjal pieces,mix well,Add the grated jaggery and mix everything well together.

Take a little of the liquid and do a taste test to see if you need to add any more salt,jaggery,red chilli powder etc...Adjust the taste as per your liking.

Cook everything on a low flame for another 2 mins.Switch off the heat and let the mixture completely cool down.

Transfer the mixture to a clean & dey glass bottle,(Tip:there should be 1 inch of oil above the mixture at all times)This will prevent it from going bad & increase the shelf life for months.

Your lovely Goan Brinjal Pickle is all ready.You can have this instantly ,but it tastes better after a day or two.

Store this pickle in a dark & cool place like a kitchen pantry.after  a month or so you can refrigerate it.

Some Important Tips to bear in mind.

When taking out the pickle from the jar,use a dry spoon .do not let any water come in contact with the pickle or else it will spoil faster.
