NO DEEP FRYING DAHI WADA RECIPE
Ingredients
For the wadas
1 Cup of Udid/udad dal washed well and soaked in water along with 1/4 tsp of meethi/fenugreek seeds,soak for 5-6 hours
after 5-6 hours grind the dal to a thick smooth paste using very little water and salt
grind 1 inch of grated ginger along with 5-6 light green chillies
add this paste to the ground dal,also add 1/2 tsp of pepper powder
heat an appe stand ,drizzle with a little cold pressed coconut oil
and add this ground mixture and cook till golden brown
keep aside and then put them into some thick butter milk
for the dahi if youre making youre own dahi
take 1 litre of milk boil and then cool to room temperature add 1/2 tsp of dahi/curd and let it sit at room temperature for 7-8 hours
after that chill it for an hour in the refrigerator
or you can buy 1 litre of dahi and chill
add 4-5 tbsp of sugar and stir into the dahi
tadka for the dahi
heat 1 tbsp desi ghee/clarified butter
add 2 red dried chillies cut into fours,few curry leaves,1/4 tsp jeera/cumin seeds
turn off the gas flame add 1/4 tsp of hing/asafotedia
add this tadka to the chilled sweetned dahi
assembling the dahi wada
take the vadas(2-3)in a small bowl (they have been soaking in some buttermilk)
add the chilled dahi
sprinkle a little red chilli powder,some salt to taste(I'm using pink Himalayan salt)
and Garnish with some fresh corriander
