Goan Prawn & Bhendi Curry|Prawn & ladyfinger goan curry|Goan Coconut curry |Caldine|Caldeen
Caldine is a coconut curry which is mostly prepared with prawns or pomfret and sometimes vegetables like okra/lady finger or dudhi/ bottle gourd is also added,It's a light & refreshing curry ,perfect for the Summer. It goes best with some goan rice /uke xitt or any steamed rice.
Lets see the Ingredients & Method
Ingredients
1 tsp of pepper powder
1/2 tsp cumin powder
1 tsp of corrinader powder
1/2 tsp of turmeric powder
1 medium onion chopped fine
1 small tomato chopped fine
1/2 cup of prawns deveined & washed clean
4 bhendis/ladyfingers washed & wiped dry & cut into
2 inch pieces.
7-8 cloves/lavang
5 cloves of garlic chopped fine
1 tbsp of vinegar
1 cup of thick coconut milk
salt to taste
Method
Heat 1 tbsp of oil in a pan,While the oil is heating up,mix the powder masalas mentioned above (pepper,coriander,cumin & turmeric )well in a bowl add the vinegar & make a paste ,set aside.
Once the oil is hot,Add the cloves/lavang,fry for a second so it flavours the oil well,Add the chopped garlic,fry it well,add the chopped onion & saute till translucent.Add the paste we prepared with the powder masalas & vinegar,mix everything well.Add the coconut milk.Mix well.Add salt to taste.Add the prawns & the tomatoes.mix well,Add the bhendi,mix well,cover & cook for 7-8 mins on a low heat till the prawns are cooked well.Add 1/2 cup of hot water and cover & cook for 2-3 mins..Prawn & ladyfinger caldine is all ready.
Enjoy this with some rice....pickle at the side
