Sheera made with Jaggery|No sugar Suji/Sooji Recipe
Today's recipe is a delicious Sheera recipe made with jaggery instead of using sugar.
गुळाचा शिरा
Ingredients
1 cup of fine semolina/rawa
(if you have the thick or medium rawa ,grind it in your mixer till fine...however do not over grind it to a fine powder)
1 cup of grated jaggery/gul
3 cups of water
1/2 cup of chopped mix dry fruits of your choice(almonds,cashewnuts,pistachois etc)
a pinch of salt(1/4 tsp)
10 tsp of ghee/1/4 cup clarified butter
1/2 tsp of cardamom/elaichi powder(3 elaichis ground to a very fine powder)
1/4 tsp of nutmeg/jaiphal powder(grate this to a very fine powder)
Method
Add the jaggery to the water and mix well,put this on the gas top and cook till all the jaggery dissolves,stirring in intervals,strain this mixture and set aside.
Roast the semolina on a low to medium flame for 3-5 mins till you get the aroma of the semolina..stirring continousky,,do not let it burn ir turn a dark brown colour,do not leave it on the gas top unattended.
Once this done,transfer the roasted semolina to a bowl,wipe the pan very clean,heat the ghee in this pan
using only 4 tsp of the ghee,add the dry fruits and fry a little till they turn light golden brown ,trf this to a bowl and set aside,
Add 4 tsp more of the ghee to the same pan,add the roasted semolina to this ghee and fry ut really well,
add the cardamom and nutmeg powders and mix well,add a pinch of salt.mix well.
Add the jaggery liquid...be extremely careful as the mixture might start spluttering ,use kitchen gloves ..
do not stir the mixture at all,cover and cook on a medium flame for 1/2 min
Now stir the sheera,,it all starts coming together and starts leaving the sides of the pan.Add the fried dry fruits,mix well,cook for 1 minute on a very low flame,
add 2 tsp of ghee evenly over the sheera.turn off the heat and enjoy this with a hot cup of tea.
