Aloo Paratha Recipe|Anyone can make these parathas|Step By Step Guidance|Winter Recipes

 Today I am sharing one of my favourite Breakfast recipes.This is a favourite with My family too...Whether it be for Breakfast,Light Lunch or Dinner or as a tiffin recipe.This is a very simple recipe.


Ingredients 

for the chutney paste

1 cup of fresh coriander leaves

3-4 green chillies

1/2 inch ginger

7 small garlic cloves

2 tsp of lemon juice

salt to taste

for the stuffing

3-4 medium potatoes boiled and peeled

salt to taste

for the covering(dough)

1 cup of wholewheat flour

water as needed

Ghee /clarified butter 

chaat masala (optional)

Method

grind all the ingredients for the chutney without adding any water.

to boil the potatoes,wash the potatoes well ,add them to a pressure pan/cooker ,add 2-3 cups of water,cook for 1 whistle on high,simmer for 5 minutes,let the potatoes cool completely before peeling them and using them for the recipe(Tip:I generally boil the potatoes the previous day and keep them in my refrigerator to use the next day..this makes them easier to use).Once cooled peel the potatoes and grate them using a cheese grater,this makes the mixture even and lump free.

for the dough,add a little water at a time to the flour and knead to a stiff dough,add a drop of oil and knead well for 1/2 a minute.this dough is similar to a poli/chappati dough.

To make the stuffing add the green chutney paste to the grated potatoes add salt if needed as we had already added salt to the chutney.

Assembling the parathas

Heat a heavy bottomed pan /non stick pan for 2-3 minutes on a low to medium heat,

Sprinkle a little dry whole wheat flour on your rolling surface,make a lemon sized ball from the dough,roll it out a little,Add 1 tbsp of the stuffing in the centre of the rolled out dough ball,seal it by gathering the edges,take of the excess,roll it out gently..roast on the heated pan on both sides,apply a little ghee on both sides and cook the parathas till golden brown.

Once ready transfer to a plate,apply a little ghee and sprinkle some chaat masala ,cut into triangles,enjoy these delicious parathas with some chilled dahi/curd/yogurt.
