Goan Sweet Potato Kheer|Ratalyachi Kheer|Kangachi Kheer|NO SUGAR
Today's recipe is one of my favourite desserts as I don't feel guilty indulging something sweet which is also healthy as it is made with sweet potato,no sugar etc.Its light & creamy and delicious.
Ingredients2-3 medium sized sweet potatoes
(soak these in water for 30 mins,scrub all the dirt and grime away using a kitchen clean brush).pressure cook these for 1 whistle on high and then slow cook for 10 mins.once cooled peel and cube.
4 tbsp grated jaggery/gul
1/2 cup of thick coconut milk(see the video below)
a few fresh turmeric/haldi leaves(optional)but this adds a amazing flavour to this kheer
1 tsp ghee/clarified butter
method
Heat a pan,add the ghee,add the cubed boiled sweet potato,saute this well,add the coconut milk,add the grated jaggery ,mix well,stir till all the jaggery dissolves.add the cardamom powder,mix well,let the mixture come to a gentle boil.add the turmeric leaves,mix well,cook for 5 mins on alow flame.turn the heat off,take out the leaves..the delicious kheer is all ready to enjoy.
