Rissois recipe
for the dough
1/2 kg of plain flour
1/4 cup water
1/4 cup milk
salt to taste
1/2 tbsp butter
for the filling
250 grams of cooked chicken cut
into very small cubes
white sauce 1/4 cup
(for the white sauce
1 tbsp plain flour
1 tbsp butter
1 cup milk)
1 medium onion chopped fine
8 cloves of garlic chopped fine
2 light green chillies chopped fine
1 tsp pepper powder
salt to taste
1/4 cup of grated cheese
Method
In a pan heat 1 tbsp of oil,once the oil.is hot add the chopped garlic and saute well..add the onion fry well,add the green chillies and fry well..add the chicken mix well add the pepper and salt..mix well..add the white sauce & mix well..add the cheese mix well..your filling is ready ..set aside to cool completely.(Tip; you could prepare this filling a day ahead)
for preparing the dough..take a pan add the water ,milk & butter.
mix well..add the plain flour and cook till everything comes together well.
Transfer the dough to a plate let it cool completely knead it to a soft dough.
Take a part of the dough & roll it into a thin roti ,cut small rounds as shown in the video.Add 1/2 tsp of the filling to 1/2 the round.add a little water on the tip of the other half. Fold like you would a neuri or karanji(as shown in the video)..once all are ready.dip each one into an egg wash(1 egg beaten well)then into bread crumbs ..deep fry till a light golden brown.
Drain the excess oil on. a kitchen napkin..once completely cooled store in an airtight container...
Enjoy with some tomato ketchup.
