 Goan Prawn Puffs Recipe|Pasteis de Camarao|Shrimp puffs|No Oven needed|Goan snack/starters recipe


Today's recipe is Goan Prawn puffs.The Portuguese call it Pasteis de Camarao.A great starter/snack recipe.

Ingredients

for the dough

1 cup of flour/maida

1/2 cup of cornflour

1/4 cup of clarified butter/ghee

salt to taste

water as needed to make a firm and flexible dough like you would for neuris etc(4-5 tbsp approx.)

for the stuffing/filling

1 cup/250 grams of prawns cleaned & deviened

1 medium onion chopped

1 inch ginger chopped fine

6-7 cloves of garlic chopped fine

1 green chilli chopped fine

1/4 cup of corriander chopped fine

2 tsp of vinegar/lemon juice

1/4 tsp turmeric powder

1/2 tsp pepper powder

4-5 fresh curry leaves

salt to taste

1-2 tbsp Oil for cooking

Method

to make the dough

Add the plain flour and corn flour to a mixing bowl,add salt to taste,add the ghee,using your finger tips,rub the ghee well into the flour,till all of the flour is coated with the ghee,it should resemble bread crumbs and when you hold it in your fist,it should hold shape and not crumble,now add a little water at a time & knead well for a whole 2-3 minutes till the dough is soft,firm and flexible ,add a few drops of ghee(1 tsp) and continue kneading for 2-4 minute .You know your dough is ready, when you press a finger in the dough ,it should leave a mark and not bounce back...Dough is ready,set aside for 10 mins.

for the filling

Heat oil in a pan,Once the oil is hot ,add the ginger ,garlic ,green chilli,to the oil and fry well till the rawness goes away ,Add the onion & saute till translucent.Add the curry leaves,pepper & turmeric powder & mix well,

Add the prawns and fry the prawns well in the bagar till it curls up and turns to  a dense opaque white colour.Add salt to taste,mix well.

Add the coriander,mix well. Turn off the heat ,add the vinegar/lemon juice mix well,let the mixture come to room temperature.

Assembling the puffs

Make small balls of the dough ,the size of a medium lemon,roll between the palm of your hands,dust the rolling board with some dry flour,roll out the balls to a puri size,add 1 tsp of the filling in the centre,add a little water to the edges,fold into half and cut the excess edges,seal the edges very well...set aside,

Once all are ready,deep fry till golden brown in colour and crispy.
