Goan Cucumber Cake| Thoushyache Mandos|No Flour,No Sugar,No Eggs,No Butter Recipe

Ingredients
1 cup rice
1 cup jaggery
4 medium ripe cucumbers
1 cup coconut(fresh/desiccated)
1 tsp cardamom powder
1/2 cup clarified butter/ghee
10-12 cashew nuts chopped
10 cashew nuts fro garnish
1/4 cup water
Method
Wash & soak the rice in 3 cups of water for 2 hours.Wash the cucumbers well,peel ,cut lengthwise ,scoop out the seeds with a spoon as shown in the video,cut roughly into ,medium pieces,add this along with the coconut to a mixer jar & grind to a smooth paste.After 2 hours drain the water from the rice and add to a mixer jar along with the grated jaggery,add 1/4 cup water and grind to a very smooth paste,Add both these pastes to a large bowl,preheat your oven to 180 deg C for 10 mins,(you can also steam this cake in a steamer)Add the clarified butter,cardamom powder & chopped cashewnuts,mix well,pour into a cake tin lined with butter paper,bake @180 deg C for 45 mins,if steaming ,steam for 30 mins or till a knife inserted comes out clean.Let the cake cool completely before demolding ,garnish with cashewnuts & enjoy with a hot cup of tea.to see how I prepare this recipe click here
