Hi All,Today's recipe is Chritsmas cake covered with my marzipan recipe...This is such a simple recipe anyone can make this ,Also the beautiful decorations on the cake are by my daughter Ira...Thankyou my darling,they made this Christmas cake look so very amazing.also the lil mistletoes are made from the same marzipan .
Ingredients for the marzipan
200 grams cashewnuts
200 grams powdered & sieved/sifted sugar
1/2 tsp almond/vanilla essence
1 egg white
method
Soak the cashewnuts in 1 cup of water for 30 mins,grind to a smooth lump free paste adding very little water (4 tbsp)
Mix all the other ingredients into this paste well,transfer to a heavy pan ,using a wooden spoon with a long handle ,keep stirring on a low to medium flame till the mixture leaves the sides of the panand thickens ,trf to a plate ,let the mixture cool completely ,knead to a very smooth dough ,set aside.

dry ingredients
125 gms plain flour
125 gms powdered sugar
1 tsp baking powder
50 gms cocoa powder
wet ingredients
125 gms butter
1 tsp vanilla essence
3 eggs(yolks & whites separated)
2 tbsp milk
misc ingredients
1/2 cup mixed dry fruits & nuts
method
mix all the dry ingredients very well,set aside,whisk the butter well for 1 minute ,add the egg yolks and mix well,add the vanilla essence &mix well,add the egg whites and mix in well,pre heat your oven for 10 mins @ 180 deg C.Add the dry ingredinets a little at a time and fold in well,last add the mixed dry fruits & nuts,trf to a lined cake tin,baking temp 180 deg C in a preheated oven for 20 to 25 mins.let the cake cool completely,demold and set aside.Roll out the marzipan on a smooth surface dusted with a little powdered sugar,roll to 1 inch thickness ,transfer this onto the cake,smoothen out the marzipan ,cut off the excess and decorate as you please,
